Chicken Inasal is one of the most famous grill chicken recipe from the Visayas in the Philippines. Because it well loved by Filipino, there is even a dedicated fast food restaurant called Mang Inasal that serve this dish all over Philippines. The local  ingredients and long marinade process makes this recipe  heavenly delicious that you will surely opt to eat more rice.

I can still recall the first time I tried chicken Inasal when I was a kid. Eating this  delicious grilled chicken together with the family evokes a lot of happy memories. Whenever chicken inasal comes into my mind. It picture a slightly charred, tender,  that burst with tangy and sweetness flavor on its meat. The yellowish orange coloring from annatto oil makes it more appetizing.

Preparing Chicken Inasal is not that complicated as long as you prepared the day ahead to ensure its well absorb flavorful meat. Once you put all the marinade ingredients together with chicken on ziploc and you are pretty much done. Although this dish is usually grilled over charcoal but using an airfryer is as good as it seems. Try it!

Airfry Chicken Inasal

This flavourful Chicken Inasal is famous grilled dish originated in the Philippines. It's tangy and citrusy flavor creates a perfect ensemble that leaves you crave for more. This dish is best paired with steam rice with soy sauce- vinegar dip. A must try for chicken lovers!

Equipment

  • Airfryer

Ingredients
  

  • 500 g Chicken breast/ thigh

Marinade ingredients

  • 1 thumb size Ginger (grated)
  • 1 stalk Lemongrass base crushed
  • 3 tbsp Annatto Oil
  • 3 tbsp Brown sugar
  • 3 tbsp Coconut Vinegar
  • 1 pinch Salt
  • 1/2 tsp Peppercorn crushed

Basting ingredients

  • 3 tbsp Annatto Oil
  • 1 tbsp Butter (melted)
  • 1 pinch Salt

Dipping Sauce

  • 2 tbsp Soy sauce
  • 2 tbsp Coconut Vinegar
  • 1 tbsp Kalamanci Juice ( or Lemon Squeeze)
  • 1 pc Bird's eye chili ( Optional)

Instructions
 

  • Combine all marinade ingredients (excep chicken) in small bowl. Mixed well
  • Pour the marinade mixture into ziploc with chicken. Shake the bag then marinade at least 4 hours. I recommended to marinade for 24 hours.
  • Combine all basting ingredients and. Mixed well
  • Baste the chicken both sides.Put an aluminum foil on the airfryer rack and arrange the marinade chicken.
  • Preheat airfryer 180 C for 3 minutes. Airfry 180 C to 20 minutes.
  • Baste again the chicken on both sides halfway through cooking time.
  • Serve with steam rice and soy sauce/ vinegar dipping
