Negima Yakitori is one of my all-time favorite food on a stick. Made with chicken thigh and scallions, this dish is rich in umami flavor. An absolute delight, to say the least.

This dish is also characterized by its savory-sweet taste thanks to the combination of ingredients that comprises its sauce. The sauce is mainly made with soy sauce, sugar, and other spices. You can experiment with different spice combinations for your preference. But for my take, I like it close to the original.

Airfry Negima Yakitori

Yakitori is one of famous izakaya ( japanese local restaurant) food. It is made of chicken and pair it with green onion which called it as Negima Yakitori. Traditionally it's cook by way of charcoal grilling but can also be done using an Airfryer.

Equipment

  • Airfryer
  • Bamboo skewers

Ingredients
  

  • 300 g Chicken thigh (cut into cubes)
  • 1 stalk Big Green onion (cut into cubes)

Shio (Salt flavor)

  • 1 pinch Salt
  • 1 pinch Pepper

Tare flavor

  • 1/2 tbsp Grated ginger
  • 4 tbsp Soy Sauce
  • 1 tbsp Brown sugar
  • 1 tbsp Mirin
  • 1 tbsp Sake

Instructions
 

  • Cut the chicken into bite size ( cube). You can make Negima Yakitori with two flavors: Salt and Tare. If you opted to make two, use half the chicken for Tare and hald for the salt ed flavor.
  • Cut the firm white part of the green onion (cube)
  • Soak the bamboo skewers for 30 minutes.

Tare flavor

  • Combine ginger, soysauce, mirin, sake, and sugar in a small bowl. Mixed well untill all dissolve.
  • Simmer the tare sauce in a pan for 4 minutes with medium heat. Set aside and keep it cool.
  • Pour 3/4 of the sauce together with chicken on a ziploc. Keep the 1/4 sauce for basting. Marinate for at least 30 minutes.
  • Alternately skewer the chicken and green onion on the bamboo sticks.
  • Preheat Airfryer 180 C for 3 minutes. Airfry 180 C for 12 minutes. Fliphalfway through the cooking time. Baste with Tare sauce during the 6 minutes.

Salt Flavor

  • Alternately skewer the chicken and green onion on the bamboo sticks.
  • Sprinkle with salt and ground black pepper.
  • Preheat Airfryer 180 C for 3 minutes. Airfry 180 C for 12 minutes. Fliphalfway through the cooking time.
