Combine all pork minced, onions, garlic, thyme, salt and pepper in a mixing bowl.
Mixed all the ingredients using your hand.
Create a thin patty then place hard boiled egg on top. Wrap the egg with remaining minced pork.
Place flour, beaten egg and panko bread crumbs on each bowls. Dip each wrapped egg first from flour to beaten egg then last to panko bread crumbs.
Brush the coated eggs with olive oil. Doing this will avoid scottish eggs looks dry.
Preheat Airfryer 200 C for 3 minutes. Airfryer for 200 C for 12 minutes. Flip half way through cooking.
Slice the scottish egg half and serve warm. Garnish with chopped parsley ( optional)
